Here’s a soft and buttery crepe recipe to add to your Recipe Journal:Ingredients:125g plain flourPinch of salt1 tbsp caster sugar (optional)2 large eggs, beaten25g melted butter, plus extra for cooking250ml milk3 tbsp cold waterMethod:Put the plain flour, salt and sugar in a mixing bowl, make a well in the centre and add the eggs. Slowly whisk in the melted butter, milk and water. Whisk into a smooth batter.Heat a frying pan over a medium heat, add a teaspoon of melted butter to the pan then add a small ladleful of pancake batter into the pan, swirling the pan so it coats the base evenly in a thin layer. Cook for 2 minutes or until the underside is golden, then flip and cook on the other side for a minute until golden. |
